Heritage at Great Trail to bring new dining experience to Minerva golf course

A new restaurant is coming to Great Trail Golf Course in Minerva, as husband-and-wife team Gina Vizzo and Brent Bratu prepare to launch Heritage at Great Trail in late spring or early summer. The restaurant, an expansion of the former Heritage Bistro in downtown Canton, will feature contemporary American cuisine with Mediterranean influences, emphasizing fresh, locally sourced ingredients.

Vizzo, who will serve as both co-owner and executive chef, brings years of culinary expertise to the restaurant, while Bratu, a Minerva native and captain with Minerva Fire, will oversee operations.

A Larger Space, A Bigger Vision

Originally operating as a small bistro in downtown Canton, Heritage at Great Trail has expanded into a full-service restaurant with seating for up to 200 guests. The venue will function as a restaurant on non-wedding days while also catering private events and weddings at the golf course.

The restaurant will be located upstairs at Great Trail Golf Course, with a deck overlooking the putting green, offering guests a scenic dining experience.

Heritage at Great Trail expects to hire 10 to 15 employees to help with operations, bringing the total number of employees to roughly 70 between the golf course, clubhouse, and restaurant. More positions could be added if the adjacent Great Trail Brewing Company becomes part of the operation.

A Menu Rooted in Fresh, Local Ingredients

As executive chef, Vizzo said her goal is to create an elevated yet approachable dining experience that caters to a variety of tastes and dietary needs.

“Our menu will be contemporary American with Mediterranean influences,” Vizzo said. “We’ll have plenty of options for everyone, including gluten-free, vegetarian, and vegan-friendly dishes—and we’ll source as many ingredients locally as possible.”

The menu will change seasonally, featuring monthly specials and inventive dishes. A full bar will serve craft cocktails, wine, and selections from local breweries.

Creating a Community Destination

Amanda Conrad, co-owner of Great Trail Golf Course, said she is excited about what Heritage at Great Trail will bring to the community.

“This isn’t just about expanding the golf course—it’s about creating a destination for great food, great events, and great company,” Conrad said.

With weddings already booked at the venue, the team anticipates a strong opening. Reservations will be encouraged but not required for general dining.

For Vizzo and Bratu, bringing Heritage at Great Trail to Minerva is more than just a business venture—it’s a way to build a gathering place for the community.

“We’re creating something special here,” Bratu said. “A place where people can come together, celebrate, and enjoy amazing food in a beautiful setting.”
